The Michelin Table Floating in Norway

Restaurant Iris occupies Salmon Eye, the floating aquaculture centre in Norway’s Hardangerfjord, just outside Rosendal. Designed by Kvorning Design, the approximately 1,000 sqm structure takes the form of an elongated ellipsoid clad in stainless-steel scales, referencing the skin of a salmon. Inside, Norm Architects softens the exterior’s geometric precision with walnut, upholstered furniture, curved carpets and low lighting. The room is divided into smaller spaces, with bespoke service stations and portable lamps following the building’s rounded geometry. The result is controlled and architectural, with the dining room functioning as an extension of the structure rather than a conventional restaurant interior.

The evening begins before the table. Guests leave Rosendal aboard the fully electric Malm or Melder and continue to chef Anika Madsen’s boathouse on Snilstveitøy, where the menu is introduced and a welcoming snack is served. From there, the journey continues to Salmon Eye and an 18-course tasting menu shaped by local ingredients, sustainability and the life beneath the sea. The Hardangerfjord, glaciers and mountains remain visible from the dining room, while the architecture keeps the landscape present without competing with it. When conditions allow, one course moves to the rooftop, where it is grilled over an open flame in the fjord air.

At Iris, architecture, access and cuisine are treated as one composition. Natural materials, earthy tones and restrained table settings continue the Nordic language of the interior, while the floating position of Salmon Eye keeps the surrounding waters central to the experience. The restaurant’s distinction lies less in conventional markers of luxury than in the precision of its setting: reaching the table requires a journey, the building was designed around its location, and the menu draws directly from the environment surrounding it. Few Michelin tables make place such an integral part of the dining experience.
