THE CULINARY THEATRE OF ALCHEMIST COPENHAGEN
Alchemist in Copenhagen has established a dining format that extends beyond conventional fine dining. Led by chef and co-owner Rasmus Munk, the restaurant serves 50 courses across 5 acts over approximately 7 hours. It holds 2 Michelin stars and has reached No. 5 in The World’s 50 Best Restaurants ranking.
The restaurant occupies a former set-building workshop of the Royal Danish Theatre. Reimagined in collaboration with Studio Duncalf, the space combines neon-lit corridors, live performers and a dome where immersive projections transform the environment around the table. Guests move between spaces as the experience unfolds, with gastronomy, architecture and performance forming a single production.
Munk’s concept of Holistic Cuisine places individual dishes within a wider cultural context. A sculptural eye filled with caviar references surveillance and media influence. A coffin-shaped chocolate confection addresses child labour in the cocoa industry, while an edible plastic creation references marine pollution. Other courses feature pigeon aged in beeswax and carefully selected varieties of caviar, with familiar objects reconstructed as edible forms.
The setting evolves throughout the meal. Under the dome, changing projections alter the atmosphere, while transitions between spaces mark the five acts. The experience is structured around sustained attention rather than the pace of conventional restaurant service. Visual technology, performance and gastronomy remain closely connected, turning the meal into a carefully choreographed sequence that extends beyond the dining table.
Alchemist requires a commitment of approximately 7 hours and operates through a ticket-based reservation system. It is not designed around a brief dinner or a conventional business meeting. Munk has also used the restaurant’s international profile to support fundraising for people experiencing homelessness and initiatives focused on access to clean drinking water in African countries, extending the project’s scope beyond culinary experimentation.
